INGREDIENTS

250g chocolate, minimum 70% cocoa solids, break into pieces

250g butter

eggs

350g dark muscovado sugar

1-2 tbsp of dark rum

150g plain flour, sifted

125g chopped pecan nuts

4 x 2.5cm/1in pieces stem ginger (from a jar), chopped

icing sugar, sifted, for dusting


METHOD


  1. Preheat oven to 180C/350F/Gas 4. Line a 30cm x 20cm/12in x 8in, deep-sided cake tin with greaseproof paper.

  2. Melt the chocolate and butter in a bowl over a pan with simmering boiling water. Stir until melted and glossy. Remove from the heat and set aside to cool.

  3. In another bowl, beat the eggs and sugar using an electric whisk until pale, fluffy and thick.

  4. Add the melted chocolate and rum, then whisk again until smooth.

  5. Gently fold in the flour, using a spoon. Add the pecan nuts and stem ginger and fold into the mixture, then pour the entire mix into the cake tin.

  6. Put in the oven and bake until the top is firm to the touch but a skewer inserted into the centre of the brownies comes out slightly sticky, this should be around 25 minutes. Remove from the oven and set aside to cool.

  7. When the brownies have cooled slightly, cut them into the desired shapes and remove from the tin. Pile onto a plate and dust with icing sugar.


This recipe is a adults version on the childrens favourite, great to serve as snacks or as a dessert. 

Serve with vanilla pod ice cream and fresh strawberrys/raspberrys.
